Cucumber Slices Thai

3 cups low-fat plain yogurt
3 small cucumbers, peeled, seeded and sliced into very thin slices
2 scallions, sliced thin diagonally
2 hot red or green finger peppers, cut in half, membranes and seeds removed and sliced thin
1/4 tsp. Imperial Sugar Extra Fine Granulated Sugar or Dixie Crystals Extra Fine Granulated Sugar

In bowl, whisk yogurt until smooth.  Add remaining ingredients.  Stir well, cover and chill until ready to serve.  Use as a side salad with spicy Thai dishes.  Serves ten to twelve.  Recipe can be reduced in half, if serving four to six guests.

Dear Imperial Sugar Company,
My memories of learning to cook include using my Easy Bake Oven to bake cakes and slicing it up for my family. My dad always made a big deal over his little slice. My dad was a career marine so in my middle school and high school years we were moving and I always managed to land in a new school with the home economics class doing cooking. I never learned to sew… My mother, however, is an amazing seamstress.
