This Peachy Quick Breakfast is a quick, easy, make-ahead breakfast. For breakfast on-the-go, you can prep this recipe together the night before and keep it in the fridge till morning. Pop it in the microwave and take it with you. You can also use whatever fruit is in season or your favorite.

INGREDIENTS

DIRECTIONS

  1. Spray a microwave-safe single serving cup with cooking spray. Break bread into small pieces and cover bottom of bowl.
  2. Top with peaches. Sprinkle with cinnamon and sugar.
  3. In a small cup, lightly beat egg and add milk and vanilla. Pour over peaches.
  4. Microwave, uncovered, on medium-high for 5 minutes. Stir and continue cooking on medium high for an additional 5 minutes.
  5. Let stand for 2 minutes. Sprinkle with additional cinnamon and sugar if desired.
