Blackberry Ginger Sauce Topped Pork Chops or Medallions is a simple, yet flavorful dinner recipe. This dish is wonderful served hot. You can also thinly slice the leftover pork, place it onto crackers and top it off with blackberry ginger sauce for an easy, but oh so gourmet, amuse-bouche.

Blackberry Ginger Sauce Topped Pork Chops or Medallions

INGREDIENTS

  • 1 (6 oz) container fresh blackberries
  • 3 tablespoons
  • 2 teaspoon minced fresh ginger
  • 1 teaspoon balsamic vinegar (optional)
  • 1 tablespoon honey
  • 4 pork chops or pork loins
  • Vegetables as desired
  • Salt to taste
  • Pepper to taste

DIRECTIONS

  1. In a small saucepan combine blackberries, sugar, ginger, and vinegar if using.
  2. Crush berries with a potato masher and bring to a boil. Simmer for approximately 7-10 minutes or until a sauce consistency has been obtained.
  3. Add honey if desired. (Honey will give the sauce a more brilliant sheen and slight honey flavor.)
  4. Cook pork and vegetables as desired and top cooked pork with sauce.
  5. Salt and pepper to taste.
