Avocado Cheesecake Bars

Avocado Cheesecake Bars



  1. Preheat oven to 350°F. Spray a 9x13-inch baking pan with non-stick cooking spray. Set aside.
  2. Mix graham cracker crumbs, sugar and melted butter. Press graham cracker mixture evenly onto bottom of prepared pan.
  3. Bake crust for 7 minutes. Remove from oven. Set aside.
  4. Beat cream cheese and sugar until smooth. Add avocado, lime zest and lime juice; mix well. Add eggs one at a time, beating well after each addition.
  5. Spread batter evenly over crust. Bake for 25-30 minutes or until cheesecake is set in center. Remove from oven; cool completely.
  6. Place cheesecake in fridge to chill for about 2-4 hours. When ready to serve, slice and garnish with fresh berries.
