Ingredients
- Crust
- 1/2 cup well packed Dixie Crystals Dark Brown Sugar
- 1 cup all-purpose flour*
- 1 cup quick cooking oats
- 1/2 teaspoon salt
- 1 stick unsalted butter, melted
- 1 teaspoon vanilla extract
- Filling
- 1 1/2 packages (12 oz) cream cheese, soft
- 1/2 cup Dixie Crystals Extra Fine Granulated Sugar
- 1 large egg + 1 egg yolk
- 1 teaspoon vanilla extract
- 4 tablespoons all-purpose flour
- Cranberry Topping
- 1 cup whole fresh cranberries
- 1/3 cup Dixie Crystals Extra Fine Granulated Sugar
- 1/4 cup orange juice or water
*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
Directions
- Preheat oven to 350°F.
- Line bottom of an 8- x 8-inch (or 9- x 9-inch) baking pan with parchment paper or butter and flour it. Set aside.
- In a bowl combine brown sugar, flour, oats, and salt. Combine melted butter with vanilla extract and stir into above using your hands. Mixture should remain crumbly.
- Press 2/3 of mixture into prepared pan and press firmly into an even layer on the bottom. Place in oven for 15 minutes. Take out of oven, set aside, and turn oven down to 325°F.
- Meanwhile in a bowl combine soft cream cheese with sugar. Stir until no cheese lumps remain before adding eggs.
- Add egg, and once smooth, add egg yolk. Add 1 teaspoon vanilla. Sift and stir in flour.
- Pour onto prebaked crust. Set aside.
- In a small saucepan combine cranberries, sugar, and orange juice and bring to a boil. Whisk mixture to break up cranberries, which will occur after about 3- 4 minutes.
- Remove from heat and whisk until mixture is thickened like jam. If necessary return briefly to heat.
- Using a spoon drizzle cranberry sauce over cheese mixture.
- Sprinkle remaining oat mixture on surface and place in oven.
- Bake until the center no longer trembles, about 38 minutes.
- Once cooled cut in desired pieces.
- Store in refrigerator and allow to come to room temperature before serving.
