Ingredients
Pancakes
- 1 1/4 cups quick cooking oats (not old-fashioned)
- 1 cup cottage cheese, low fat or regular
- 1/4 teaspoon salt
- 3 tablespoons Dixie Crystals Extra Fine Granulated Sugar
- 4 large eggs or 7 egg whites
- Zest of 1 orange, no bitter white pith
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Blueberry Topping
- 2 cups blueberries, frozen
- 3 tablespoons Dixie Crystals Extra Fine Granulated Sugar
- Zest of 1 lemon or orange
Directions
- If serving pancakes with blueberry topping, make it first by combining blueberries, sugar, and zest in a saucepan. Bring to a boil and simmer until slightly thickened, about 5-10 minutes. Set aside.
- If using a pancake griddle preheat to medium-high heat.
- Combine all ingredients in a blender and blend until smooth.
- Let batter rest a few minutes as oats will absorb moisture and batter will slightly thicken.
- Pour batter onto preheated griddle in desired amounts.
- After about 2 minutes flip pancakes over and cook the other side.
- Serve with blueberry sauce or topping of choice.
