Slow Cooker Apricot Pulled Pork dixie


  • 4 lbs boneless pork shoulder
  • 1/4 cup Dixie Crystals Light Brown Sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 18-ounce jar apricot preserves
  • 1/4 cup apple cider vinegar
  • 2 tablespoons dijon mustard
  • 1 large yellow onion, chopped


  1. Place pork shoulder in a large slow cooker.
  2. In a medium bowl, combine brown sugar, cumin, garlic powder, salt, and pepper. Rub spice blend onto meat.
  3. Whisk apricot preserves, cider vinegar, and mustard together in a medium bowl. Pour over meat. Add chopped onion to the slow cooker.
  4. Cover and cook on low heat for 6-8 hours. Remove meat and shred with forks.
  5. Skim off excess fat from apricot sauce, then return shredded meat to slow cooker and mix.
  6. Serve on rolls as sandwiches, in salads, or as part of rice bowls.
