Ingredients
- 2 tablespoons (30g) water
- 1 envelope (7g) gelatin (Knox® recommended*)
- 2 tablespoons (28g) coconut oil or shortening
- 1 tablespoon + 1 teaspoon (30g) honey
- 1 1/2 teaspoons orange extract
- A few drops of orange color (optional)
- 2 1/2 cups (300g) Dixie Crystals Confectioners Powdered Sugar, sifted after measuring
- Extra Dixie Crystals Confectioners Powdered Sugar for rolling dough
Directions
- In a microwave-safe bowl, large enough to hold all ingredients combine coconut oil or shortening and honey. Heat mixture just until coconut oil or shortening is melted.
- Place gelatin mixture in microwave for about 20-30 seconds until gelatin is melted. Add to oil/honey mixture and whisk smooth.
- Add orange extract, color and powdered sugar and knead to a smooth dough. If a stronger orange flavor is desired add more extract.
- Roll dough on sifted powdered sugar to approximately 1/8 inch or slightly thicker.
- Decorating surface can be done by rolling with a ribbed rolling pin or by dragging a fork.
- Cut using a round cutter of about 1 inch in diameter.
- Place on parchment-lined cookie sheets to dry for at least a day at room temperature in a dark place. A bright lit place will bleach out the color.
- Merrimints should have a slighty tender inside with a firmer exterior. It may take a few days of drying to obtain right texture.
