Almond Orange Biscotti

Ingredients

2 1/2 cups unbleached all-purpose flour*
1 teaspoon baking powder
1 cup Dixie Crystals Extra Fine Granulated Sugar
1/2 cup (1 stick) butter, melted
1 teaspoon salt
3 large eggs
2 teaspoons vanilla extract
2 tablespoons orange zest, no white bitter pith
1 teaspoon almond extract
1 1/2 cups whole almonds, coarsely chopped

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

Preheat oven to 350°F.
Sift together flour and baking powder and set aside.
Pour sugar in a bowl and add melted butter and salt. Stir in eggs, vanilla extract, orange zest and almond extract. Add flour and almonds and mix gently.
Place dough in freezer for about 30 minutes to make it easier to handle.
Divide dough into 3 equal pieces.
Place parchment paper on a 9 x 13-inch baking pan. Shape dough into logs nearly entire length of cookie sheet. Place well spaced apart on cookie sheet. If dough is sticky make your hands slightly wet to prevent sticking.
Bake in oven until center is set, about 33 minutes. Remove from oven and let cool for 20 minutes. Meanwhile reduce oven temperature to 250°F.
Using a serrated knife cut logs diagonally into 1/2-inch slices and place on cookie sheet.
Return to oven until cookies are nearly crisp, about 25 minutes. Once cold, cookies will become completely crisp.

Ingredientes

2 1/2 tazas de harina (no blanqueada) multiuso (Spoon and sweep method*)
1 cucharadita polvo hornear
1 taza
1 barra mantequilla, derretida
1 cucharadita de sal
3 huevos grandes
2 cucharaditas vainilla
2 cucharadas ralladura de naranja, sin la parte blanca
1 cucharadita extracto de almendra
1 1/2 tazas almendras enteras

*Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

Direcciones

Calienta el horno a 350°F.
Cierna la harina y el polvo de hornear juntos y póngalos a un lado.
Vierta la azúcar en un tazón y añada la mantequilla y la sal. Añada los huevos, la vainilla, la ralladura de naranja y la almendra.
Ponga la masa en el congelador por alrededor de 30 minutos para facilitar su uso.
Divida la masa en 3 partes iguales.
Forre un molde de 9 x 13 con papel de pergamino. Forme la masa en tronquitos del largo del molde de galletas. Asegúrese separar los tronquitos uno de los otros. Si la masa esta pegajosa, humedézcase las manos para prevenir que se peguen.
Hornee hasta que el centro esté firme, alrededor de 33 minutos. Saque del horno y permita que se enfríen por 20 minutos. Mientras tanto baje la temperatura del horno a 250° F.
Usando un cuchillo serrado, corte los tronquitos diagonalmente en tajadas de 1/2 pulgada y póngalos en el molde de galletas.
Regrese las galletas al horno hasta que estén casi crujientes alrededor de 25 minutos. Cuando estén frías, las galletas estarán completamente crujientes.
