I will make this again, and again!! Made it for someone recovering from surgery, who shares my love for coconut cream pie. His first comment was that it was the best piece of pie he had ever eaten. He thought the chocolate layer was a genius idea. I made two, so we could keep one home. Ours did not last long, had to share with drop in company who actually asked for seconds.
I was hesitant to cook the filling by adding everything to a saucepan, and cooking until it boiled and thickened, but it worked! Not having to temper the eggs was nice.
