Chocolate Spider Web Whoopie Pies

Ingredients

2 cups + 4 tablespoons all-purpose flour*
1 teaspoon baking soda
1/2 teaspoon cream of tartar
10 tablespoons cocoa powder (non Dutched)
1 cup Dixie Crystals Extra Fine Granulated Sugar
1 teaspoon salt
1 large egg
2 teaspoons vanilla extract
7 tablespoons vegetable oil
1 1/2 cups well shaken buttermilk
Filling Basic Buttercream Frosting

Spider Web Icing

1 large egg white
1 cup + 2 tablespoons Dixie Crystals Confectioners Powdered Sugar

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

Preheat oven to 350°F.
Line 2 to 3 cookie sheets with parchment paper and set aside.
Sift together flour, baking soda, cream of tartar, cocoa powder, sugar and salt and set aside.
In another bowl whisk together eggs, vanilla, vegetable oil and buttermilk. Add dry ingredients and using a firm spatula mix until combined and no flour is visible. Do not overmix as this will make the batter runny.
Either use a piping bag fitted with a medium sized plain tip or using a spoon, drop/pipe two tablespoon amounts onto prepared cookie sheets about 2 inches apart.
Place in oven and bake until center of cakes bounce back when lightly pressed with a finger, about 12 minutes. Let cool.
For buttercream: Beat butter until smooth and creamy, add powdered sugar, milk, vanilla and salt and mix until light and fluffy.
Pipe or spoon butter cream on one whoopie pie half and sandwich with another.
For spider web icing whip egg white and powdered sugar until light and thick. The icing can be adjusted by adding a small amount of egg white to make it thinner or powdered sugar to make it thicker.
Fit icing in a little piping bag fitted with a very small plain tip and pipe a spider web on surface and decorate with spiders.
Make edible candy spiders to dress up the whoopie pies.

10 cucharadas cacao en polvo (no sometido al proceso holandés)
1 taza Dixie Crystals Azúcar Granulada Extra Fina
1 cucharadita sal
1 huevo grande
2 cucharaditas extracto de vainilla
7 cucharadas aceite vegetal
1 + 1/2 tazas suero de mantequilla bien agitado

Relleno de crema de mantequilla:

2 barras mantequilla sin sal, blanda
3 tazas Dixie Crystals Azúcar en Polvo Confeccionar
2 cucharadas leche
2 cucharaditas extracto de vainilla
Una pizca sal

Glaseado para la telaraña:

1 clara huevo grande
1 taza + 2 cucharadas Dixie Crystals Azúcar en Polvo Confeccionar

*Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

Precaliente el horno a 350°F
Cubra 2-3 bandejas para hornear con papel pergamino y póngalas a un lado.
Tamice la harina, el bicarbonato de sodio, el bitartrato de potasio, el cacao en polvo, el azúcar y la sal y ponga a un lado.
En otro tazón, bata los huevos con la vainilla, el aceite vegetal y el suero de mantequilla. Agregue los ingredientes secos, y utilizando una espátula firme, mezcle hasta que los ingredientes se incorporen y que no haya ninguna harina visible. No mezcle demasiado ya que esto hará que la masa sea líquida.
Utilice una manga pastelera provista de una boquilla de pastelería de tamaño medio o una cuchara para colocar cantidades de dos cucharadas sobre las bandejas para hornear preparadas, manteniendo una separación de 2 pulgadas.
Ponga las bandejas en el horno y hornee hasta que el centro de los pasteles recupere su forma cuando se presiona ligeramente con un dedo, o sea unos 12 minutos. Deje enfriar.
Para la crema de mantequilla: Bata la mantequilla hasta que quede suave y cremosa, agregue el azúcar en polvo, la leche, la vainilla y la sal, y mezcle hasta obtener una mezcla ligera y esponjosa.
Utilizando la manga pastelera o una cuchara, extienda la crema de mantequilla sobre un lado del pastel "whoopie" y cúbralo con el otro para formar la galleta emparedada.
Para el glaseado de la telaraña, bata la clara de huevo y el azúcar en polvo hasta obtener una mezcla suave y espesa. El glaseado puede ser ajustado agregando una pequeña cantidad de clara de huevo para que sea menos espeso, o azúcar en polvo para que sea más espeso.
Llene una pequeña manga pastelera provista de una boquilla muy pequeña con el glaseado y forme la telaraña sobre la superficie del pastel y decore con arañas.
