Citrus Spice Glazed Ham Dixie



    1. Combine following in a large saucepan: orange juice, sugars, bay leaf, cinnamon stick, peppercorns, cloves and allspice.
    2. Bring to a boil.
    3. Blend thickener of your choice with reserved cup of orange juice.
    4. Add to mixture, reduce heat and continue to cook at a brisk simmer until liquid has reduced and is thick enough to coat back of a spoon, about 30 minutes.
    5. Preheat oven to 450° F.
    6. Place ham, fat side up, on a rack in a shallow roasting pan large enough to comfortably hold ham.
    7. Pour glaze over ham.
    8. Bake ham in middle of preheated oven, basting ham every 1/2 hour until done or until meat can easily be pierced with a long pronged meat fork. Cover with a loose tent of foil, if needed, to prevent over browning.
    9. Garnish with orange slices and roasted vegetables, if desired

    Glaseado para Jamón, Especias y jugo de Naranjas

    1. En un sartén grande, mezcle el jugo de naranja, azúcars, hoja de laurel, palito de canela, pimientas y clavos de especias.
    2. Deje que la mezcla hierva.
    3. Aparte mezcle la fécula de maíz  o arrurruz con la ½ taza de jugo de naranja que reservo. Añada a la mezcla en el sartén, reduzca el fuego removiendo ocasionalmente hasta que el liquido haya espesado y se quede pegado en la parte de atrás de una cuchara.
