    Recipe A:

    1. In a saucepan bring heavy cream and milk to a boil. Remove from heat.
    2. Meanwhile, in a separate bowl vigorously whisk yolks and sugar until well combined and mixture is thick. Pour one third of boiled milk into yolk mixture and whisk quickly. Pour yolk mixture into remaining milk and stir well.
    3. Check with a thermometer, if below 182°F return to medium heat, while CONSTANTLY stirring bottom of pan with a rubber spatula. Heat to 182°F but not above 185°F. (The mixture will curdle above 185°F)
    4. Pour mixture through a fine sieve into a bowl. Cool mixture quickly by placing bowl into iced water. Add vanilla. Let cool until very cold before pouring into ice cream machine.

    Recipe B:

    1. In a saucepan bring to a boil milk and sugar. Remove from heat and place covered in a bowl containing ice cubes to quickly cool mixture. Add heavy cream and vanilla.
    2. Let cool until very cold before pouring into an ice cream machine.

    Egg yolk contributes to the smoothness of ice cream. However, ice cream made with egg yolk needs to be properly heated to destroy any bacteria potentially harmful to humans, especially women who are pregnant and the elderly. Therefore a cooking thermometer is essential.  If a cooking thermometer is not available, prepare Recipe B, which contains no egg yolks.

    Receta A:

    1. En una cacerola, hierva la crema y la leche. Saque del fuego.
    2. Mientras tanto, en otro tazón, bata vigorosamente las yemas y la azúcar hasta combinarlas bien y la mezcla esté espesa. Vierta un tercio de la leche en la mezcla de huevo y bata rápidamente. Vierta la mezcla de huevo en el resto de la leche y bata bien.
    3. Si el termómetro marca menos de 182º F, caliente la mezcla a fuego medio mientras bate constantemente con una espátula de goma. Caliente a 182º F pero no a más de 185º F. (La mezcla se pondrá grumosa si la temperatura sube de 185º F.
    4. Cuele la mezcla en un cedazo fino. Enfríe la mezcla rápidamente poniendo el tazón dentro de agua helada. Añada la vainilla. Déjela enfriar hasta que quede muy fría antes de verterla en la máquina de helado.

    Receta B:

    1. En una cacerola, hierva la leche y la azúcar. Saque del fuego y póngalo en un tazón con cubitos de hielo para enfriar la mezcla rápidamente. Añada la crema y la vainilla.
    2. Deje enfriar la mezcla hasta que quede bien fría antes de verterla en una máquina de helado.
