Rich and creamy, sweet and tart, Lemon Curd is a spreadable custard-like filling that can be used for cakes, cookies, tarts and more. Actually it's so good you may just eat it straight out of the jar!

Extra Fine Granulated Pure Cane Sugar Bag

Ingredients

1/2 cup lemon juice
1 cup Dixie Crystals Extra Fine Granulated Sugar
3 large eggs
1 teaspoon gelatin
1 tablespoon water
3/4 cup (1 1/2 sticks) unsalted butter, soft

Directions

In a non-reactive saucepan bring lemon juice and 1/2 of sugar to a boil.
In a separate bowl whisk eggs for 2 minutes and quickly whisk in remaining sugar. Pour 1/2 of boiling lemon syrup into eggs and beat well.
Pour egg mixture into remaining lemon syrup and whisk back to a boil. Boil for 1 minute while constantly whisking and mixture has the consistency of thick bubbling honey. Remove from heat and cover with plastic food wrap.
Mix gelatin with water and set aside for 5 minutes.
Add gelatin and stir into above. Once incorporated add SOFT butter in small nuggets and stir with a spatula. If butter was too cold and refuses to dissolve in curd, place in a microwave for a few seconds. Let cool in refrigerator.

Crema de Limón (Cuajada de Limón)

Ingredientes

1/2 taza jugo de limón
1 taza Dixie Crystals Azúcar Granulada Extra Fina
3 huevos grandes
1 cucharadita de gelatina
1 cucharada de agua
3/4 taza (1 1/2 barras) mantequilla sin sal, suave

Direcciones

En una olla que no reaccione ponga el jugo de limón y la mitad del azúcar a hervir
En un envase aparte bata con una espumadora los huevos por 2 minutos y rápidamente agregue y bata el resto del azúcar
Agregue los huevos en lo que queda del almíbar de limón y bata con una espumadera hasta que hierva. Deje hervir por 1 minuto mientras bate constantemente y la mezcla tome consistencia domo de una miel espesa y con burbujas. Remueva del calor y cubra con plástico de envolver de cocina.
Mezcle la gelatina con el agua y ponga a un lado por 5 minutos.
Agregue la gelatina a la mezcla de arriba y mezcle. Una vez que todo este incorporado, agregue la mantequilla en pedazos pequeños, y revuelva con una espátula. Si la mantequilla estaba muy fría y no se derritió, coloque por varios segundos en el microondas. Deje enfriar en el refrigerador.
