Macaroni and Cheese

  • 3 tablespoons (42g) unsalted butter (for preparing pan)
  • 2 teaspoons salt
  • 1 pound (454g) elbow macaroni
  • 8 tablespoons (113g) unsalted butter
  • 6 tablespoons all-purpose flour*
  • 3 1/2 cups (840g) milk
  • 1 cup (240g) whipping cream
  • 1 tablespoon mustard
  • 1 teaspoon ground black pepper
  • 2 teaspoons salt
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 16 ounces (454g) extra sharp cheddar, grated
  • 3/4 cup (90g) parmesan cheese
  • Few tablespoons chopped parsley (optional)

Topping

  • 1 1/2 cups (100g) panko breadcrumbs
  • 1 cup (90g) grated extra sharp cheddar (yellow or white)
  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

  1. Cut candied bacon into bite-size pieces and set aside.
  2. Melt first listed butter and coat a 9 X 13-inch baking dish or select individual serving ramekins. Set aside.
  3. Add salt to a large pot of water and bring to a full boil. Add macaroni and cook to al dente. Drain and set aside.
  4. Preheat oven to 375°F.
  5. In a large pot melt second listed butter. Add flour and whisk until combined. Keep whisking over medium heat for about 3 minutes or until mixture is very light golden.
  6. Keep on heat and add about a third of milk and whisk rapidly, once lump-free and smooth add another third. Once smooth again add remaining milk. Whisk until smooth. Whisk in whipping cream.
  7. Add mustard, black pepper, salt, cayenne pepper, and garlic powder. Add cheddar cheese in 4 increments while whisking and keeping heat on medium. Add parmesan.
  8. Once cheese is thoroughly melted add macaroni. Add bacon. Fill into selected vessel.
  9. Sprinkle with cheese and Panko. Place in oven and bake until edges are bubbling about 25 minutes. Smaller ramekins will be ready sooner.
  10. If desired sprinkle with chopped parsley.
