Pie Crust

Mango Filling

  • 5-6 large mangos, well-ripened
  • 2/3 cup (122g) Dixie Crystals Extra Fine Granulated Sugar
  • 1 tablespoon (9g) cornstarch
  • 3 tablespoons (24g) all-purpose flour*
  • Pinch salt
  • Zest of 1 lime, no white bitter pith
  • Juice of 1 lime (2-3 tablespoons)(30-45g)  

Streusel Topping

  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.


  1. Prepare pie crust and set aside in the refrigerator.
  2. Peel one mango at a time and cut into chunks and slices. It is impossible to obtain even size mango pieces; fortunately it isn't necessary. Largest size mango piece should be no bigger than 1 X 1 inch. Cut enough mangos to obtain 6 cups. Place in a bowl large enough to hold all ingredients.
  3. Add sugar, cornstarch, flour, salt, lime zest, and lime juice. Combine well and set aside.  
  4. On a well-floured surface, roll half of pie dough large enough to cover a 9-inch-deep pie pan. Make sure no cracks develop, as this will allow filling to seep under the crust while baking. Remove excess dough from edges.
  5. Preheat oven to 350°F and place mango filling in pie shell.
  6. Prepare streusel using a box grater. Grate cold butter into flour (as you would grate cheese.) Add sugar and salt. Using your fingers and rubbing between palms, work mixture until it resembles wet sand.
  7. Sprinkle streusel on mango filling and place in oven.
  8. Roll remaining pie dough about 1/8 inch or slightly thicker. Using cookie cutter of choice (circles, butterflies, leaves, etc.) make cutouts. Place on a parchment-lined cookie sheet.
  9. Brush surface of cutouts lightly with water and sprinkle with a thin coat of granulated sugar. Place in oven for about 14 minutes or until lightly golden. Set aside.
  10. If surface of pie gets too dark, drape with aluminum foil. The total baking time will be near 75 minutes. Pie is done when thick bubbles that look like the consistency of honey are visible on the surface.
  11. Remove from oven. Decorate with pie cutouts and powdered sugar. Zest a lime and sprinkle on surface of pie.
