Have you tried Cookie Butter yet? Cookie butter is a spread made from ground-up spice cookies (speculoos) that can be found all across Europe and is used similarly to peanut butter or other nut butters. Luckily for us, Cookie Butter is catching on here in the U.S. as well. In these No Bake Cookie Butter Cookies we've combined this sweetly spicy spread with oatmeal to create a quick, easy and delicious no-bake cookie ready in under 15 minutes!

Products Used

Extra Fine Granulated Pure Cane Sugar Bag

Ingredients

1/2 cup (1 stick) unsalted butter
1 3/4 cup Dixie Crystals Extra Fine Granulated Sugar
1/2 cup milk
pinch of salt
3 cups quick oatmeal
1/2 cup Cookie Butter Spread
2 teaspoons vanilla

Directions

In a large saucepot, combine butter, sugar, milk, and salt. Bring to a rolling boil until 210-215°F, or, approximately 1 to 1 1/2 minutes at a full boil. Remove from heat.
Immediately add in all remaining ingredients, stirring until well combined. Working quickly, drop heaping tablespoons onto wax or parchment paper and allow to cool.
