Ingredients

Pancakes

  • 1 1/4 cups quick cooking oats (not old-fashioned)
  • 1 cup cottage cheese, low fat or regular
  • 1/4 teaspoon salt
  • 3 tablespoons Dixie Crystals Extra Fine Granulated Sugar
  • 4 large eggs or 7 egg whites
  • Zest of 1 orange, no bitter white pith
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Blueberry Topping

Directions

  1. If serving pancakes with blueberry topping, make it first by combining blueberries, sugar, and zest in a saucepan. Bring to a boil and simmer until slightly thickened, about 5-10 minutes. Set aside.
  2. If using a pancake griddle preheat to medium-high heat.
  3. Combine all ingredients in a blender and blend until smooth.
  4. Let batter rest a few minutes as oats will absorb moisture and batter will slightly thicken.
  5. Pour batter onto preheated griddle in desired amounts.
  6. After about 2 minutes flip pancakes over and cook the other side.
  7. Serve with blueberry sauce or topping of choice.
