Peach and Caramelized Onion Flat Bread Pizza


  • 2 tablespoons butter
  • 1 medium sweet onion, sliced
  • 3 tablespoons divided Dixie Crystals Light Brown Sugar
  • 1 flatbread rectangular pizza crust or 4 pita bread rounds
  • 1 large peach, cored, sliced
  • 1/4 cup blue cheese crumbles
  • 1 tablespoon fresh rosemary, chopped (optional)


      1. Preheat oven to 425°F.
      2. Melt butter in a medium saucepan. Add onion slices, cook and stir over medium heat until onion is softened and onion starts to brown around edges (about 15 minutes).
      3. Stir in 2 tablespoons of the brown sugar; cook and stir for 5 minutes or until onion is lightly browned and caramelized.
      4. Spread onion mixture onto pizza crust or pita bread rounds.
      5. Top with sliced peaches, blue cheese and rosemary, if desired.  Sprinkle with  remaining 1 tablespoon brown sugar.
      6. Bake for 8 to 10 minutes or until cheese is melted.
