Directions

  1. Soften gelatin by sprinkling gelatin over water in a small cup. Mix and set aside.
  2. On top of a double boiler, combine eggs, sugar, and pineapple juice. Whisk constantly over medium heat. Let come to a bubble, about 5 minutes.
  3. When mixture starts to bubble, add butter, one piece at a time. Whisk constantly until butter has melted before adding another piece. When mixture is thick, add softened gelatin and stir until dissolved.
  4. Strain curd through a sieve and stir in crushed pineapple. Pour mixture into prepared pie crust and let chill for at least 3 hours.
  5. To make meringue, add egg whites to a heatproof bowl and whisk with a hand electric mixer over a pan of simmering water. Beat on medium-high until they start to thicken, then gradually add in sugar, 1 tablespoon at a time, beating until mixture is glossy and peaks are easily held (about 5 minutes).
  6. Add meringue to the top of pie. Brown edges with a kitchen torch if desired.

  1. Suavice la gelatina espolvoreándola  sobre agua en una taza pequeña. Mezcle y ponga a un lado.
  2. Sobre un hervidor doble, combine huevos, azúcar, y jugo de piña. Usando una espumadora, bata constantemente sobre fuego medio. Deje que se formen burbujas, alrededor de 5 minutos.
  3. Cuando la mezcle comience a hacer burbujas, agregue la mantequilla, una pedazo a la vez. Usando la espumadora, bata constantemente hasta que la mantequilla se haya derretido antes de agregar otro pedazo. Cuando la mezcla este gruesa, agregue la gelatina suavizada y revuelva hasta que se disuelva.
  4. Pase la cuajada sobre un colador y agregue y mezcle la piña machucada. Vierta la mezcla sobre la corteza de tarta ya preparada y deje enfriar por al menos 3 horas.
  5. Para preparara el merengue:, agregue las claras de huevo en una envase a prueba de calor y bata con una batidora eléctrica de mano sobre una olla de agua muy caliente. Bata en velocidad media alta hasta que se comiencen a poner gruesas, y luego gradualmente agregue el azúcar, y cucharada a la vez, batiendo hasta que la mezcla se vea brillante y los picos se mantenga de manera fácil (alrededor de 5 minutos).
  6. Agregue el merengue sobre la tarta. Haga que las puntas se pongan marrones con una antorcha de cocina, si así lo desea.
