Pumpkin Pecan Praline Torte

Pumpkin Cake

  • 1 1/4 cups all-purpose flour*
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 2 teaspoons ground ginger
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/3 cups Dixie Crystals Extra Fine Granulated Sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup pumpkin puree (not pumpkin pie filling)

    Cream Cheese Frosting

    Pecan Praline Topping

    • 1/2 cup firmly packed Dixie Crystals Light Brown Sugar
    • 3/4 cup whipping cream
    • 1/4 teaspoon salt
    • 1 tablespoon vanilla extract
    • 1 1/2 cups pecan halves
    • 1/2 teaspoon allspice
    • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

    Directions

    1. Preheat the oven to 350°F.
    2. You will need three 9 or 8 inch round cake pans. Cut 3 parchment rounds by placing a cake pan on parchment paper. Draw a circle around bottom edge and cut using scissors. Repeat twice.
    3. Place a parchment cutout into each cake pan and brush paper and sides with melted butter or spray with baking spray. Sprinkle evenly with flour and shake out excess, set aside.
    4. Blend and sift together flour, baking soda, baking powder, cinnamon, ginger, allspice and salt. Set aside.
    5. In a bowl large enough to hold all ingredients whisk egg using a hand held or stand mixer until well blended, add sugar and whip until thick and pale, about 5 minutes. On low speed add vanilla and pumpkin.
    6. Stir in flour and mix until just combined. Scoop and divide evenly into prepared pans.
    7. Place in oven and bake until center of cakes bounce back when lightly pressed with a finger or an inserted toothpick comes out clean, about 13-15 minutes.
    8. Allow to cool for 5 minutes. Turn upside down on kitchen or paper towels which have been evenly sprinkled with powdered sugar. Allow to cool completely.
    9. For frosting mix cream cheese and soft butter on low speed until blended. Add one cup of powdered sugar and mix on low speed until blended.
    10. Gradually add remaining powdered sugar and mix on low to medium speed until light and fluffy. Add vanilla and mix well.
    11. For pecan praline topping: If desired pre-toast pecans for 8 minutes in a 350°F oven.
    12. In a saucepan bring all ingredients to a boil excluding pecans. Boil for 3 minutes ensuring that  mixture will not boil over. Remove from heat and stir in pecans. Set aside.
    13. Remove parchment paper from one cake round and place cake on a serving platter. Frost surface with approximately 1/3-inch cream cheese frosting. Spread frosting evenly across cake, or use a piping bag to add teardrops of frosting around edges. If using a piping bag, fill center with swirls of cream cheese frosting.
    14. Remove parchment paper from second layer and place onto frosted cake round. Frost once again with cream cheese frosting. Remove parchment paper from third layer and place onto frosted cake round.
    15. Spoon pecan praline topping over top layer of cake. If caramel topping is too firm to spread onto surface heat briefly until slightly softened. Do not allow to get warm!
    16. Keep refrigerated but remove from refrigerator at least one hour before serving.

    This is an easy and awesome dessert. The only thing is I made the frosting as directed and had a whole lot left over, next time I will do half. This is a must for Thanksgiving at my house.

    This is a fabulous cake. The amount of allspice was left off ingredients list but I used 1/2 teaspoon. Also, I took out a cup of the cream cheese frosting to use later and I still had plenty. My whole family loved it. It is a keeper!

    Tarta de Calabaza con Pacanas Garapiñadas

    Products Used

    Ingredientes

    • 1 1/4 tazas harina de todo uso*
    • 1/2 cucharadita bicarbonato de sodio
    • 1 cucharadita polvo de hornear
    • 1 cucharada de canela
    • 2 cucharaditas jengibre molido
    • 1/2 cucharadita de pimienta de Jamaica
    • 1/2 cucharadita de sal
    • 4 huevos grandes
    • 1 1/3 tazas Dixie Crystals Azúcar Granulada Extra Fina
    • 2 cucharaditas extracto de vainilla
    • 3/4 taza puré de calabaza (no relleno de tarta de calabaza)

    Glaseado de Queso Crema

    Pacanas Garapiñadas

    • 1/2 taza empacada firmemente Dixie Crystals Azúcar Morena Clara
    • 3/4 taza crema de batir
    • 1/4 cucharadita sal
    • 1 cucharada extracto de vainilla
    • 1 1/2 tazas de pacanas cortadas a la mitad
    • *Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

    Direcciones

    1. Precaliente el horno a 350 F.
    2. Va a necesitar tres moldes de hornear redondos para pastel de 9 o 8 pulgadas. Corte 3 pedazos redondos de papel parafinado colocando el molde sobre el papel parafinado, dibuje un círculo alrededor de la orilla del fondo y corte con tijeras. Repita dos veces más. 
    3. Coloque el papel parafinado en cada uno de los moldes de hornear y con una broche coloque mantequilla derretida sobre el papel y los lados del molde o rocié con aerosol de hornear.
    4. Mezcle y tamice juntos la harina, bicarbonato de sodio, polvo de hornear, canela, jengibre, pimienta de Jamaica y la sal. Ponga a un lado.
    5. En un embase lo suficientemente grande como para contener todos los ingredientes bata los huevo utilizando una batidora electica de mano o de pie hasta que bien mezclado, agregue el azúcar y bata hasta que este grueso y pálido, por alrededor de 5 minutos. En velocidad baja agregue vainilla y calabaza.
    6. Agregue la mezcla de harina y mezcle hasta que esté todo combinado. Divida de manera igual y coloque en cada molde de hornear anteriormente preparado.
    7. Coloque en el horno y hornee hasta que el centro de las tortas rebote cuando se presione ligeramente con un dedo o hasta que un mondadientes salga limpio, alrededor de 13 a 15 minutos.
    8. Deje que enfríen por 5 minutos. ponga de cabeza en la cocina o en toallas de papel que hayan sido previamente espolvoreadas con azúcar en polvo para confituras. Deje que enfrié completamente.
    9. Para el glaseado, mezcle el queso crema y la mantequilla suave en velocidad baja. Agregue una taza de azúcar en polvo y mezcle en velocidad baja hasta que este combinado.
    10. Gradualmente agregue el resto de la azúcar en polvo a la mezcla en velocidad media baja hasta que esté suave y esponjosa. Agregue la vainilla y mezcle bien.
    11. Para el tope de pacanas garapiñadas: Si lo desea ponga las pecanas a tostar por 8 minutos en el horno a 350 F.
    12. En un sartén ponga todos los ingredientes a hervir excepto por las pacanas. Deje hervir por 3 minutos asegurándose de que la mezcla no se derrame. Remueva de calor y agregue las pacanas. Ponga a un lado.
    13. Remueva el papel parafinado de uno de las capas de torta y coloque en un plato de servir. Coloque 1/3 de pulgada de glaseado de queso crema y riegue de manera uniforme en la torta, o utilice una manga de pastelería para agregara gotas de glaseado alrededor de los bordes. Si utiliza una manga, llene el medio con remolinos de glaseado de queso crema.
    14. Remueva el papel parafinado de la segunda capa y colóquelo sobre la torta que ha sigo glaseada. Coloque de nuevo glaseado de queso crema. Remueva el papel parafinado de la tercera capa y coloque sobre la torta recién glaseada.
    15. Con una cuchara agregue las pacanas garapiñadas sobre la capa superior de la torta. Si el tope de caramelo está muy firme como para regar en la superficie, caliente un poco hasta que se haya aflojado un poco. No deje que se caliente!
    16. Mantenga refrigerado pero remueva del refrigerar por lo menos una hora antes de servir.
