Signature Red Velvet Cake

Ingredients

  • 1 cup vegetable oil
  • 2 cups Dixie Crystals Extra Fine Granulated Sugar
  • 2 eggs, at room temperature
  • 4 tablespoons (2 ounces) liquid red food color
  • 1 tablespoon cocoa powder
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour*
  • 1 1/2 teaspoons baking soda
  • 1 cup buttermilk
  • 1 tablespoon vinegar
  • Frosting
  • 3 packages (8 ounces each) cream cheese, soft
  • 3/4 cup (1 1/2 sticks) unsalted butter, soft
  • 1 tablespoon vanilla extract
  • 2 1/2 cups

      *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

      Directions

      1. Preheat oven to 350°F.
      2. Butter and flour three 8 or 9 inch cake pans and set aside.
      3. Mix oil and sugar for 5 minutes on medium speed. Add one egg at a time waiting for previous added egg to be fully incorporated.
      4. Mix food coloring with cocoa powder very well and add to above. Add salt and vanilla.
      5. Sift together flour and baking soda and add 1/3 to above mixture, mix until just until combined.
      6. Combine buttermilk with vinegar and add half of buttermilk to above, mix until just combined. Add another 1/3 of flour and mix until combined. Repeat with remaining buttermilk and remaining flour.
      7. Divide cake batter evenly into 3 cake pans and place in preheated oven. Bake for approximately 35-45 minutes (depending on cake pan size used) or when an inserted toothpick comes out clean.
      8. Allow to cool for 5-10 minutes before turning over and removing from pan. Let cool before frosting.
      9. For frosting, mix soft cream cheese with soft and lump free butter on low speed. Add vanilla extract.
      10. Gradually add powdered sugar.
      11. Place a cake layer on a serving tray and coat with frosting. Add another layer frost sides and top of cake.

      Helpful Hints:

      Sift sugar and flour as you combine ingredients. Sifting makes for a smoother batter and frosting - less chance for clumps.

      To make frosted rose petals:  Brush a little bit of egg yolk on your fresh rose petals.  Sift powdered sugar on top of egg yolk on the petal. Gently place petal on a drying rack for several hours until egg yolk dries. Voila! Beautiful decorations for your Signature Red Velvet Cake.

      I made this yesterday and it turned great! I baked cake on 325 instead of 350 I've found for my oven it's better to lower the temp for same baking time. I added a third egg yolk (only not white o 3rd egg) also. This cake is delicious!

      Pastel de Terciopelo Rojo

      • 1 taza de aceite vegetal
      • 2 tazas de Dixie Crystals Azúcar Granulada Extra Fina
      • 2 huevos, a temperatura del ambiente
      • 3 cucharadas (1.5 oz) de color vegetal líquido rojo
      • 2 cucharadas de cacao en polvo
      • 1 cucharadita de sal
      • 1 cucharada de extracto de vainilla
      • 2 1/2 tazas de harina multiuso*
      • 1 1/2 cucharadita de bicarbonato
      • 1 taza de suero de la leche
      • 1 cucharada de vinagre

      Para el glaseado

      *Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

      Direcciones

      1. Engrase y espolvoree con harina 2 moldes de 8 o 9 pulgadas y póngalos a un lado.
      2. Mezcle el aceite y la azúcar por 5 minutos a velocidad media. Añada un huevo a la vez esperando a que se incorpore completamente antes de añadir el próximo.
      3. Mezcle bien el color vegetal con el cacao en polvo y añádalo a la azúcar.
      4. Añada la sal y la vainilla.
      5. Cierna juntos la harina, el bicarbonato de soda y añada 1/3 a la mezcla anterior y mezcle hasta que quede combinada.
      6. Combine el suero de la leche con el vinagre y añada mitad del suero a la mezcla, batiendo hasta combinar.
      7. Añada otra tercera parte de la harina y mezcle hasta que quede combinada.
      8. Repita con el resto del suero y la harina.
      9. Divida la mezcla en partes iguales y viértalas en cada molde. Hornee por aproximadamente 35 a 45 minutos (dependiendo del tamaño de molde que esté usando) o cuando un palillo introducido en la mezcla salga limpio.
      10. Permita que se enfríe por 5 a 10 minutos antes de verter el molde y sacar el pastel.  Déjelo  enfriar completamente antes de ponerle el glaseado.
      11. Para el glaseado, mezcle el queso crema suave con la mantequilla a velocidad lenta.  Añada la vainilla.
      12. Lentamente añádale la azúcar en polvo.
      13. Coloque el pastel en un plato de servir y póngale el glaseado. Coloque el próximo nivel y cúbralo con el glaseado.
