
Steviacane Peanut Brittle

Ingredients
- 1 1/4 cups light corn syrup
- 2 1/4 sticks butter
- 1 cup Steviacane
- Or 2 cups Dixie Crystals Extra Fine Granulated Sugar
- 1 cup roasted peanuts
- 1/2 teaspoon salt
Directions
- Add corn syrup, butter, Steviacane and salt to a medium-sized non- stick pot. Cook over high heat stirring frequently until mixture reaches 260°F, use a candy thermometer.
- Add peanuts and continue to stir until mixture reaches 310°F.
- Pour mixture onto cookie sheet and let cool.
- Once brittle is cool, break up into pieces and store in an airtight container.
