Strawberries & Cream Cupcakes

Products Used


  • 1 (16.25 oz) box white cake mix
  • 1 1/4 cups water
  • 3 large eggs whites
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon almond extract
  • 2 teaspoons vanilla extract
  • 1 pint strawberries, sliced
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 cup, plus additional for dusting Dixie Crystals Confectioners Powdered Sugar


      1. Preheat oven to 350°F. Place paper baking cups into muffin pan. Set aside.
      2. In a large bowl, whisk together cake mix, water, egg whites, butter, almond extract and vanilla extract, until well combined.
      3. Spoon batter evenly into prepared muffin pan, filling each cup 3/4 way full.
      4. Bake for 15-17 minutes until a toothpick inserted in the center comes out clean. Let cupcakes cool on a cooling rack for 10 minutes.
      5. While cupcakes cool, make the cream filling. In a stand mixer with whisk attachment, beat the heavy cream, vanilla extract and powdered sugar until stiff peaks form.
      6. Fold the sliced strawberries into whipped cream. Slice the tops off each cupcake and fill with whipped cream mixture. Place cupcake top back on and sprinkle the tops with powdered sugar. Serve immediately.

      Pastelito de Fresas con Crema

      Products Used


      1. Precaliente el horno a 350 F. Coloque las tacitas de papel de hornear pastelitos en la bandeja de panecillos. Ponga a un lado.
      2. En un envase grande, usando una espumadora, bata juntos la mezcla de pastel, agua, claras de huevo, mantequilla, extractos de vainilla y almendra, hasta que esté bien combinado.
      3. Usando una cucharada vierta la mezcla preparada en la bandeja de panecillos antes preparada, rellenando cada espacio 3/4 lleno.
      4. Hornee por 15 a 17 minutos hasta que un mondadientes insertado en el centro salga limpio. Deje que los pastelitos enfríen en una rejilla de refrigeración por 10 minutos.
      5. Mientras los pastelitos se enfrían, haga el relleno de crema. En una batidora de pie con la pieza de espumadora, bata la crema pesada, extracto de vainilla y azúcar en polvo hasta que se formen picos firmes.
      6. Usando movimientos envoltorios agregue las fresas rebanas a la crema batida. Rebane el tope de los pastelitos y rellene con la mezcla de crema batida. Coloque los topes de los pastelitos sobre la crema y espolvoree con azúcar en polvo. Sirva Inmediatamente.

      Absolutely scrumptious. Delightfully light, creamy and just plain good. Not one cupcake left, they were gone before I could spoon the last of the cream into the cupcake. The only advice I have, is I will not be using cupcake liners again. Overall this is a winner.

      Dye free and delicious! These are always a big hit when I make them for special occasions!!! They are not overly sweet, a crowd pleasure for sure. Light and delightful! It is hard to eat just one! This is my 5yr old sons favorite cupcake!
