Toffee Graham Cracker Cookies

Ingredients

    • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

    Directions

    1. Preheat oven to 350°F. Prepare two cookie sheets with parchment paper or a silicone baking mat. Set aside. 
    2. In bowl of stand mixer, combine butter, brown sugar, and sugar. Mix 1-2 minutes or until creamy and well combined.
    3. Beat in vanilla and egg.
    4. Add graham cracker crumbs, flour, cornstarch, baking soda, and salt, mix until well combined.
    5. Fold in chocolate chips and toffee bits.
    6. Scoop 1-inch sized balls of dough onto prepared cookie sheets. Top with additional chocolate chips and toffee bits. Bake for 10-11 minutes until set up and golden around edges.
    7. Remove from oven and let cool for 2-3 minutes on baking sheet before removing to a wire rack to cool completely.

    I followed recipe exactly. Even refrigerated for a couple hours. Baked and was flat as a pancake. Tasted great though.

    I made this recipe and followed the instructions exactly, had a nice thick dough, but my cookies were SO flat. Like insanely flat. However, they’ still tasted amazing, so I’d really like to make them again but have them be thicker and like the picture. Can someone tell me why mine were sooo flat even when I followed the recipe?

    Ingredientes

    • 3/4 taza mantequilla sin sal, suavizada
    • 3/4 taza Dixie Crystals Azúcar Morena Clara
    • 1/4 taza Dixie Crystals Azúcar Granulada Extra Fina
    • 2 cucharaditas extracto de vainilla
    • 1 huevo grande
    • 1 1/2 tazas de galletas estilo Graham desmoronadas
    • 3/4 taza harina todo uso*
    • 2 cucharaditas maicena
    • 1 cucharadita bicarbonato de sodio
    • 1/2 cucharadita sal
    • 1 taza chispas de chocolate + mas para el tope
    • 3/4 taza caramelos de leche en pedacitos + mas para el tope
    • *Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

    Direcciones

    1. Precaliente el horno a 350 F.
    2. En el envase de una batidora de pie, combine la mantequilla, azúcar morena y azúcar. Mezcle hasta que este cremoso y bien combinado.
    3. Agregue el huevo y bata junto con la vainilla.
    4. Agregue los pedazos de galletas estilo Graham, harina, maicena, bicarbonato de sodio y sal, mezcle hasta que esté bien combinado.
    5. Usando movimientos envoltorios agregue las chispas de chocolate y los pedazos de caramelo de leche.
    6. Agarre bolitas de masa de 1 pulgada y póngalas en una bandeja previamente forrada. Póngale arriba mas chispas de chocolate y pedacitos de caramelo. Hornee por 10 a 11 minutos hasta que estén lista y estén doraditas en los lados.
    7. Remueva del horno y deje enfriar de 2 a 3 minutos en la bandeja de hornear removiendo a un estante de alambre para que enfríen completamente.
