    Directions

    1. In a small saucepan bring to a boil the whipping cream, vanilla and granulated sugar.
    2. Place butter and chopped chocolate in a microwave proof bowl.
    3. Pour boiling cream mixture into chocolate bowl.
    4. Whisk gently until smooth and all chocolate is dissolved. In a cold kitchen some of chocolate may not dissolve. In such case, place for 10 seconds in microwave oven and whisk again.
    5. Cover bowl and allow filling to set at room temperature until the next day or at least 4 hours.
    6. Prepare a baking sheet with parchment paper.
    7. Place chocolate mixture into a piping bag with a tip with a large opening. Pipe chocolate truffles on parchment paper lined sheet. Let truffles rest on baking sheet at a cool room temperature for approximately 45 minutes.
    8. Sift together cocoa powder and powdered sugar and place on a parchment lined surface for easy clean up.
    9. Wearing plastic gloves to keep hands from melting truffles, gently roll each piped truffle into a ball and then roll in cocoa powder mixture to coat on all sides.
    10. Truffles can be kept for a couple of days at room temperature. For longer conservation place in refrigerator.

    NOTE: Truffles are made with just a few natural ingredients and are easy to make. To obtain good results using high quality chocolate and cocoa powder is essential. Many chocolate manufacturers indicate on the label the cocoa mass content. The higher the cocoa mass the stronger the chocolate flavor. This recipe is formulated using chocolate with a cocoa mass content between 58% and 65%. Using a different chocolate may make the truffles too sweet or too bitter. Truffles are best when consumed at room temperature.

    I made chocolate truffles for Christmas baskets this year. I rolled in cocoa, powdered sugar, finely crushed almonds and pecans! They were scrumptious! Put them in tiny cups and a decorative box! Beautiful.

    1. En una cacerola pequeña hierva la crema dulce, la vainilla y la azúcar.
    2. Coloque la mantequilla y el chocolate picadito en un tazón apto para uso en microondas.
    3. Vierta la mezcla cremosa dentro del tazón con chocolate.
    4. Mezcle ligeramente hasta que quede suave y todo el chocolate se haya disuelto.
    5. Si su cocina esta fría parte del chocolate no se disolverá. En ese caso, colóquelo en el microondas por 10 segundos y vuelva a mezclar.
    6. Cubra el tazón y permita que el relleno se enfríe a temperatura de ambiente o hasta el próximo día pero al menos por 4 horas.
    7. Cierna juntos el cacao en polvo y la azúcar en polvo y colóquelo sobre un molde de galletas forrado con envoltura de plástico.
    8. Usando una cucharita para hacer pelotitas de melón, haga pelotitas de la mezcla de chocolate y ruede sobre el chocolate en polvo. Los chocolatitos pueden dejarse a temperatura de ambiente por un par de días pero para preservarlas más tiempo póngalas en el refrigerador.
