A cake made in the microwave? You're probably thinking this won't work - but this recipe will change your mind. Our Whole Wheat Snack Cake has apples, cinnamon, chopped nuts, brown sugar, whole wheat flour and vanilla -- and is ready to eat in just 14 minutes!

Redi-Measure Light Brown Sugar Pouches

1 lb. Light Brown Sugar Box

Ingredients

1 cup whole wheat flour*, stone ground, if possible
4 pouches (1 cup) Redi-Measure Light Brown Sugar
1/2 cup all-purpose flour*
3/4 cup butter, chilled
3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon cinnamon
2/3 cup milk
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 large baking apple (Rome or Granny Smith)
1/2 cup chopped nuts (walnuts, pecans or almonds) (optional)

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

Directions

Place whole-wheat flour, brown sugar and all-purpose flour in a large mixing bowl and blend well.
Cut butter into flour mixture until it resembles coarse crumbs. Remove 1 cup and reserve for topping.
Stir together baking powder, salt and 1/2 teaspoon of cinnamon into remaining mixture.
In a separate bowl, lightly beat milk with egg and vanilla extract. Pour into dry mixture and stir, by hand, until just moistened.
Grease a 9-inch, round, microwave-safe pie plate and fill with batter. Arrange peeled apple slices in a single, even layer over batter.
To one cup of topping, add chopped nuts and 1 teaspoon of cinnamon and sprinkle evenly over apple slices.
Microwave uncovered, on medium heat setting for 9 minutes, rotating dish every three minutes. Cook on high in microwave for 3-5 minutes longer (rotating once), or until cake springs back when lightly pressed in its center and no uncooked batter remains on bottom of dish.
Once done, allow cake to stand at room temperature for 5 minutes before serving.

I really loved the simplicity of this snack cake. The apples, cinnamon and crumb topping are great. This cake would be great for a breakfast or brunch but should be eaten the day it's made. It was very moist and tender the first day but was much more dry the second day.

Ingredientes

1 taza de harina integral (molida en piedra, si es posible)
4 bolsas de Dixie Crystals Redi-Measure Azúcar Morena Clara
1/2 taza de harina multiuso *
3/4 cucharadita de mantequilla fría
3/4 cucharadita de polvo de hornear
1/2 cucharadita de sal
1/2 cucharadita de canela en povlo
1 cucharadita de canela en polvo
2/3 taza de leche
1 huevo grande, levemente batido
1 cucharadita de extract de vainilla
1 manzana para hornear (Rome o Granny Smith)
1/2 taza de nueces picaditas (pacanas, almendras) (opcional)

*Método de cuchara y barrido: use una cuchara para llenar la taza de medir con harina hasta obtener la cantidad requerida. Si coloca la taza de medir directamente en la bolsa de harina, empacará la harina con firmeza y se necesitará demasiada harina para la receta.

Direcciones

Vierta la harina de trigo, la azúcar morena clara, y la harina multiuso en un envase grande y mezcle bien.
Corte la mantequilla en trozos y añádala a la mezcla de harina. Mezcle hasta que la mezcla parezca migas gruesas. Reserve una taza para cubrir.
Mezcle el polvo de hornear, la sal, y ½ cucharadita de canela y añádala a la mezcla de harina.
En un envase aparte, mezcle la leche, el huevo y la vainilla. Bata levemente. Añada a la mezcla y mezcle a mano hasta que la mezcla este húmeda.
Engrase un molde de tartas para microondas, redondo de 9 pulgadas, vierta la mezcla. Arregle las rebanadas de manzanas de forma uniforme sobre la mezcla.
Aparte, una la taza de la mezcla de harina que reservó, las nueces y la cucharadita de canela en polvo. Esparza uniformemente sobre las rebanadas de manzanas.
Coloque en el microondas sin cubrir, a temperatura media por 9 minutos, rote el molde cada 3 minutos. Luego cambie la temperatura a alta y cocine de 3 a 5 minutos mas rote el molde una vez o hasta que el centro rebote después de ser levemente apretado o cuando un palillo de dientes introducido en el centro salga limpio.
Una vez listo, permita que el pastel se enfríe a temperatura ambiente por 5 minutos ante de servir
